Chocolate Banana Spelt Cookies (Egg-Free)

These Chocolate Banana Spelt cookies are packed with flavour and are a healthy nude food lunch box snack.

 

Spelt is a nutritious alternative to wheat, packing more fibre, protein and goodness in and lower on the glycemic index.

(This recipe is egg-free)

 

 

 

Preparation takes around 5 Minutes, and they will need approximately 12 minutes in the oven.

 

 

These make a soft (not crunchy) cookie.

 

Suitable to Freeze in a reusable container for 3-4 months

 

 

 

Ingredients (Makes 12-14 Cookies)

 

1 Cup of Spelt Flour

 

3/4 Cup of Rolled Oats

 

1/3 Cup of Raw Honey

 

110 grams of butter

 

1 Banana

 

1/4 Cup of Chocolate Chips 

 

1 Tspn of Vanilla Extract

 

A Sprinkle of Cinnamon

 

 

 

Method

 

>Start by pre-heating your oven to 180 degrees Celsius

 

 

>Mix butter, honey and vanilla essence, until it looks creamy and consistent

 

Make sure the butter is room temperature, if not, warm in 10 second increments in the microwave

 

 

>Add banana and mash roughly with a fork

 

 

>Add all remaining ingredients and mix through

 

 

Your cookie dough should look like a very thick cake batter.

 

 

 

> Spoon onto baking tray(s) and flatten slightly

 

If using non-stick cookware, the cookie dough can be spooned directly on. If not, skip the baking paper and grease lightly with butter or coconut oil.

 

>Bake for around 10-12 minutes until it starts to brown

 

>Carefully transfer to a wire rack or just cool them on the tray - They can be a little soft and delicate straight from the oven.

 

 

 

I usually spread these over 1 and 1/2 baking trays as I'm a messy cook and rarely arrange things neatly on the tray. I also have a tendency to kind of splat them on, I think this is just a typical mum thing to do when there are never enough hours in the day!

 

Hints on Making this Recipe Zero Waste

 

 

-This recipe puts ripe bananas to good use and saves them from the bin

 

 

-Get raw honey from your local healthfood store, and Bring your own jar to refill. 

 

 

-Chocolate is pretty easy to find zero waste. If you can't get choc-chips, simply chop up a chocolate with a knife.

 

-Always skip baking paper It's so unnecessary, these cookies wont leave a mess and will slide right off non stick bake-ware. Here are some more tips baking without parchment paper.

 

- Spelt can be found in bulk stores, but not all. My local supermarket has started stocking this Kialla Foods brand and I'm loving the detail on their labels....

>Skip disposable plastic such as freezer bags and gladwrap. These cookies can be stored in a container on the bench, in the fridge, or freezer.
